One more note, if you want your chicken to be moist like a restaurant's you will need to brine it first. That’s their secret:) I’ ’m telling you, you won’t believe the difference. This is super easy and guarantees moist delicious chicken breasts. Here’s a link on how to do that. HOW TO BRINE. They refer to grilling the chicken in this article, but it’s the same brine process if baking or roasting chicken.

Sheet Pan Fajitas

Sheet pan fajitas are quick, easy and don't require a lot of clean-up.Yay!
Prep time: 20 MinCook time: 20 MinTotal time: 40 Min

Ingredients

  • 1 large onion
  • 3 bell peppers, any color
  • 1 lb. chicken breast
  • 3 Tbsp olive oil
  • 3 teaspoons of fajita or taco seasoning
  • 8 six-inch tortillas
  • 1 medium lime
  • 1/2 cup sour cream (optional)
  • 1/4 bunch cilantro (optional)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cut the onion and bell peppers into 1/2-inch wide strips. Place them on a sheet pan lined in parchment or foil for easy clean-up.
  3. Generously sprinkle the chicken with Kosher salt and pepper.
  4. Slice the chicken breast into thin strips and add it to the sheet pan with the vegetables.
  5. Drizzle the olive oil over the chicken and vegetables, then sprinkle the fajita seasoning mix over the top. Toss the ingredients until everything is well coated in olive oil and seasoning then spread into an even layer.
  6. Bake in a preheated oven for 25-40 minutes. The cooking time will depend on the thickness of your chicken so start checking it at 25 minutes.
  7. During the last 5 minutes of cooking, warm the tortillas.
  8. When cooked through, remove the chicken and vegetables from the oven and squeeze fresh lime juice from 1/2 a lime over the top.
  9. Serve with tortillas, cilantro, and or sour cream if desired.

• I buy my chicken breast when it’s on sale and freeze it for quick dinners.

• Top with jalapenos if you like it spicy, or add them to the vegetables when baking.
