Make-Ahead Freezer Egg Sandwiches

Make-Ahead Freezer Egg Sandwiches, a busy weeks dream come true. Healthier and tastier than the fast-food version. These sandwiches are easily customizable by topping with avocado, hot sauce, ham slices, or tomatoes

Note: microwaves are all different. Yours thawed sandwich may reheat in as little as one minute!

Make-Ahead Breakfast Sandwich

Ingredients

  • 8 eggs
  • 1/4 cup milk
  • 1/2 teaspoons salt
  • 6 slices cooked and crumbled bacon or 3/4 cup diced ham, or 3/4 cup cooked sausage
  • 1/2 cup your favorite shredded cheese (optional)
  • a few handfuls of spinach (optional)
  • 6 English muffins, I use whole wheat
  • 6 Slices of cheese, I use cheddar
  • Butter

Instructions

  1. Preheat oven to 300 degrees. Generously oil a rimmed 1/4 sheet pan or 9x18 baking dish.
  2. Whisk the eggs, milk, salt, bacon, shredded cheese, and spinach Pour the egg mixture into the oiled sheet pan or baking dish. Bake for about 15-18 minutes, until just set.
  3. Meanwhile toast muffins if desired.
  4. Remove from the eggs from oven and cool slightly, then cut into 6 equal squares or use a mason jar lid to cut out 6 circles.
  5. Butter the English muffin if desired. Then add the
  6. cut egg, followed by a slice of cheese, and finally the top bun.
  7. Wrap each sandwich individually in plastic wrap. Then place wrapped sandwiches
  8. in a large freezer-safe zip top bag and refrigerate for up to 1 week or freeze for up to 3 months.

Notes:

  • If you want thicker eggs, add a few more eggs until you get the thickness you like. The baking time will be slightly longer.
  • The sandwiches are great topped with avocado, hot sauce, ham slices, or tomatoes

Reheating From the Fridge: 

Toaster oven or regular oven, Set the oven to 425 and bake it for 8-10 minutes.

Microwave: Remove plastic wrap and microwave for 2-3 minutes, turning over halfway.

Reheating From the Freezer: 

Microwave: Remove plastic wrap and wrap in paper towel microwave at 50% or on defrost setting for 2 1/2 - 3 minutes. Then heat on high for 1 minute. Note: All microwaves are different so take note of the times that work for you and add it to this recipe.

Thaw overnight in the refrigerator: Remove plastic wrap and wrap in paper towel microwave on high for 30 seconds -2 minutes. Check at the 30-second mark to see how your doing.
