Easy Caprese Salad

Caprese salad is a simple Italian salad, made of mozzarella, tomatoes, and sweet basil, seasoned with salt, and olive oil. it's quick to put together and perfect all summer long. See the notes section of the recipe for all my tips:)

Caprese salad is a simple Italian salad, made of mozzarella, tomatoes, and sweet basil, seasoned with salt, and olive oil. it's quick to put together and perfect all summer long.

Ingredients

  • 2 cups cherry tomatoes halved
  • 1/2 teaspoon of granulated sugar (optional, but it adds a sweetness if tomatoes aren’t perfectly ripe)
  • 1 1/2 cups fresh mozzarella pearls or other mozzarella cheese cut in small cubes
  • Juice from one fresh lemon
  • 1/4 cup Basil Infused Olive Oil (I prefer Olive Tree olive oil)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 6-8 large basil leaves chopped

Instructions

  1. In a medium bowl combine olive oil, lemon juice, salt & pepper, and sugar if using. Whisk well with a fork.
  2. Add cherry tomatoes halves and mozzarella to the bowl with the olive oil mixture.
  3. Sprinkle with chopped basil.
  4. Taste, and add more salt & pepper as needed.
  5. Serve immediately, or it will last in the refrigerator (covered) for a day or so. It's best served at room temperature.

Notes

  • Try adding chopped cucumber for a refreshing variation.
  • Use more or less of any veggie, it's easily customized.
  • The recipe can be doubled or tripled for a crowd.
  • Store whole tomatoes on the countertop. If refrigerated they quickly lose their flavor and texture.
  • Cut tomatoes can be stored in the refrigerator for up to 2 days.
  • This recipe is great for entertaining because it can be made ahead of time and stored in the refrigerator for up to 2 days.
  • Use cherry tomatoes year-round for this salad, but when beautiful homegrown are in season, use them instead. Just chop them into big a big dice.
  • Try serving over grilled fish or chicken
