Chicken Saltimbocca w/ Sauce

Ingredients

  • 3 Tablespoons olive oil
  • 4 thinly sliced chicken cutlets (scallopini)
  • 8 slices thinly sliced prosciutto
  • 8 fresh sage leaves, plus more for garnish
  • All-purpose flour, for dredging
  • Kosher salt and freshly ground black pepper
Sauce if using
  • 3 tablespoons unsalted butter
  • 1/4 cup dry white wine
  • 1/4 cup chicken broth
  • Lemon wedges, for serving

Instructions

  1. Season the chicken with salt and pepper.
  2. Dredge in flour and shake off excess.
  3. Place 1-2 sage leaves on each breast, depending on the size of your leaves.
  4. Wrap each piece of chicken in 2 slices of prosciutto. Press the prosciutto to help it adhere to the chicken.
  5. Heat the olive oil in a large skillet over medium flame.
  6. Place the cutlet in the pan, seam-side down first.
  7. Cook for 3 minutes or until crisp; flip the cutlet over, and saute the other side for 2 minutes or until cooked through.
  8. Transfer the saltimbocca to a serving platter and keep warm.
  9. For the sauce, add butter to the skillet. Add the wine and cook, scraping up any brown bits (that's flavor) over high heat until reduced by half, 2 minutes. Add the stock and bring to a boil. Cook until reduced by half, 3 minutes.
  10. Pour the sauce on top of the chicken and serve. Garnish with extra sage if desired.

This Italian classic is a favorite at many restaurants,but it's also simple enough to make at home.

To make Chicken Saltimbocca, you'll need thin chicken cutlets, prosciutto, sage leaves, salt, pepper, and toothpicks. Start by seasoning the chicken with salt and pepper, then lay a slice of prosciutto and a sage leaf on top of each piece. Roll up the chicken and press to adhear.

In a large skillet, heat some oil over medium-high heat. Once the oil is hot, add the chicken and cook for about 3-4 minutes on each side, until golden brown and cooked through.

To make a simple Saltimbocca sauce, you can use the same pan you cooked the chicken in. Add some chicken broth, white wine, and a squeeze of lemon juice to the pan, and scrape up any brown bits from the bottom. Let the sauce simmer for a few minutes until it's slightly reduced and thickened.

To serve, spoon the Saltimbocca sauce over the top. You can also sprinkle some extra chopped sage and a pinch of salt over the sauce for added flavor.
