  1. Place the raw ground beef, diced onion, and garlic in the slow cooker. Pour in the diced tomatoes and the marinara sauce
  2. Add in seasonings.
  3. Pour in the beef broth.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  5. Remove the lid. Taste and add more salt and pepper if needed.
  6. Break the dried lasagna noodles into bite-size pieces and stir them in. I break them in over the crock pot, so all the small pieces will fall directly into the crock pot.
  7. Cover and cook on high for 30-45 minutes until the noodles are cooked through.
  8. Serve immediately. Ladle soup into bowls, add a tablespoon of ricotta, mozzarella, and Parmesan cheese, and top with fresh basil if using.

Notes

  • Add more veggies if desired ( 1 bell pepper diced / 16 oz mushrooms sliced or diced) to the soup if desired. Add them when you add the onions.
  • Serve with garlic bread and a side salad if desired.
