Easy Southwest Tortillia Soup

Ingredients
- 4 cups chicken stock
- 1 lb of shredded rotisserie chicken, or any shredded/diced cooked chicken. (about 4 cups)
- 2 (10 oz) cans red enchilada sauce (mild or medium)
- 1 (14 oz) can fire-roasted tomatoes, diced
- 1 (14 oz) can creamed corn
- Corn tortillas to thicken (optional, see note)
- Toppings (optional) sour cream, shredded cheese, cilantro, corn chips, avocado, sliced radishes
Instructions
- Put everything in a stockpot and simmer on medium heat until it simmers.
- See notes regarding thickening.
- Serve with toppings as desired.
Notes
To Thicken:
- Add 5-10 torn corn tortillas if you like a thicker soup and let simmer. Start with 5 and add more until desired consistency. (The torn tortillas will thicken the soup as they soften and disperse into the liquid)
- Or mix 1-2 Tablespoons of cornstarch with 1/3 cup of the hot soup. Mix until dissolved and add the mixture back to the soup and simmer.
Options:
- Add a can of beans.
- Add a bit of heavy cream if you'd like it creamy.
- If your soup is ever too spicy try adding: Something sweet (sugar, honey, etc.), more liquid (water, canned tomatoes, or broth), or a bit of heavy cream if you like a creamy soup.
