One of my favorite soups. Creamy, rich, and only a few Ingredients!

Instructions

  1. In a large heavy-bottomed soup pot, heat the oil over medium heat and stir in the onions.
  2. Cover, reduce the heat to medium or medium-low, and cook for 10-15 minutes, checking that the onions don't burn. You want these to cook down slowly.
  3. Add the squash to the onions.
  4. Stir in salt, pepper, cumin, and broth.
  5. Bring to a boil, cover, reduce the heat, and simmer for 30 minutes or until the squash is tender.
  6. Purée the soup in a blender or food processor in batches, or use an immersion blender.
  7. Reheat the soup if needed; taste and add more salt or cumin to taste.

Notes

  • Choose a butternut with a long neck, you will get more squash and fewer seeds.
  • To make butternut easier to peel, slice off the top and bottom, poke the squash all over with a fork and microwave it on high for about 3 minutes. When it's cool enough to handle, peel the squash. The softened flesh will make peeling (and slicing) way easier
  • You don't need to chop squash or onions small because you will blend them in a blender or immersion blender at the end.
