Roasted Tomato Pasta

 
 

Quick, easy, and flavorful pasta tossed with roasted tomatoes, fresh basil! I give lots of options for add-ins as well!

This is a great way to use tomatoes in the winter! Roasting them concentrates their flavor and creates an absolutely delicious sauce. I use Cervsai capellini or spaghetti pasta for this dish. I love how the thinner noodle gets coasted with this delicate sauce. I also love that Cervasi is a local Kansas City company! #shoplocal And their pasta is made with high-quality durum wheat AND imported from Italy. It’s the real deal friends!

Roasted Cherry Tomatoes

Who wants a versatile side dish, that can be transformed into several other dishes AND is ready In just 15 minutes? Oh and did I mention it only has 3 simple ingredients (if you don’t include S&P). These little flavor bombs are a go-to for my fanciest dinner party and also a dish that I make frequently for myself.

Ingredients

  • 3 tablespoons olive oil (Cervasi Preferred)
  • 2 pints cherry tomatoes
  • 4 large cloves garlic, minced
  • Salt & pepper, to taste
  • 8 basil leaves, chopped (Chiffonade if your being fancy:)

Instructions

  1. Preheat the oven to 400 degrees.
  2. Rinse the tomatoes. 
  3. Place tomatoes and garlic on a parchment-lined baking sheet and drizzle with olive oil. Shake the sheet to coat the tomatoes and spread them out into a single layer. 
  4. Sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft and one or two have burst their skin.
  5. Transfer the tomatoes to a serving platter and sprinkle with basil if using, and another light sprinkle of salt. Serve hot or at room temperature.

Notes:

-Try not to use garlic that is sold in a jar. It only has a fraction of the flavor. If you aren’t a big fan of mincing garlic (who is??) get yourself a good garlic press.

-Don’t skimp on the kosher salt! These tomatoes need a generous sprinkle to really bring out the flavor.

-These tomatoes will last in the refrigerator up to a week or you can freeze them for later use

-Try adding 2 tablespoons of good balsamic vinegar to the tomatoes before roasting.
