This easy cheesy corn dip with cream cheese, cheddar, is a creamy, delicious dip that’s perfect for all your summer parties. It’s a great appetizer for tailgating, too! My Corn Dip recipe is simple to make and ready in about 20 minutes.

Ingredients

  • 2 tablespoons butter or basil infused olive oil (I prefer KC’s Olive Tree olive oil)
  • 8 oz. cream cheese
  • 2 cans, drained corn
  • 1 cup shredded sharp cheddar cheese
  • 4 oz. can of fire roasted diced green chiles
  • 1 jalapeno, diced (optional)
  • Garlic salt to taste
  • Black pepper or cayenne pepper to taste
  • Optional toppings (see notes)

Instructions

  1. In a skillet (at least 8 inches) melt butter and cream cheese over medium heat and stir until smooth.
  2. Add in corn, green chiles, garlic salt, pepper and jalapeno if using, and stir to combine.
  3. Add cheddar cheese and stir until fully melted.
  4. Top with optional toppings if desired
  5. Serve hot with tortilla chips!

Notes

  • Top with croumbed cooked bacon, green onions, or fresh parsely.
  • This can be made in a slow cooker: Add all ingredients and cook on low for 3-4 hours, stirring occasionally, or until everything is melted and bubbly.
  • You can also use fresh corn, simply cut it off the cob. (3-4 pieces)
  • You can replace the olive oil with butter.
