Fresh cucumber salad! A perfect side for any summer gathering. Try this cucumber dill salad alongside any grilled entree.
Prep time: 40 MinTotal time: 40 Min
Ingredients
- 2 English cucumbers, sliced ¼ inch thick on bias
- 1 tablespoon kosher salt
- ½ cup white vinegar
- 1/3 cup snipped fresh dill, plus more for garnish
- 3 tablespoons sugar
- ½ teaspoon coarsely ground pepper
- 1 red onion, thinly sliced (optional)
Instructions
- Place cucumber slices in a colander over a plate. Sprinkle with kosher salt and toss. Let stand for 30 minutes, stirring once. Rinse cucumbers and drain well.
- In a bowl, combine the white vinegar, dill, sugar and pepper. Add cucumbers and toss to coat. Cover and refrigerate for at least 15 minutes before serving.
Notes
Salting the cucumbers makes the dressing flavorful, not watered down. It also makes the cucumbers taste more like cucumbers. It intensifies their flavor and the crunch!. The salting process takes about 30 minutes and is well worth it.
