Summer Corn and Avocado Salad

 
 

Fresh Sweet corn…is there really anything better at a summer gathering??.…..I think not! Well, maybe a cold Sangria…but I digress.

I love this recipe for a lot of reasons.

  • First, you don’t even have to cook the corn. I know, I’m not even kidding. I tried it both ways and it’s even better straight off the cob…and that means it’s a no-cook recipe. yahoo.

  • The vinaigrette is super easy and can be used on lots of other dishes. It starts with yummy Cervasi olive oil and then adds just a few more ingredients. Easy-Peasy.

  • Second, you can make it your own. I give you lots of ideas on ingredients you could use…and you simply add what you like or have on hand.

  • And lastly, it’s best at room temperature. That means it travels well and perfect for outdoor gatherings.
