Spring Vegetable Salad

 
 

Look at this beauty. I’m taking advantage of all the spring goodness. Asparagus, sugar snap peas, frozen garden peas, and shaved zucchini. Pair that with a light vinegarette and a bit of lemon, and you are basically eating a bowl of spring! You could add green onions, radishes or really anything that makes y our heart sing:) This is a great side dish to any main, but what you can do with the leftovers is just as delicious. I give you all the tips on the recipe below.
