Easy Chicken Parmesan

The best chicken parmesan with a deliciously crispy coating smothered in a rich homemade Pomodoro sauce and melted mozzarella cheese!

Ingredients

  • 4 boneless, skinless chicken breasts, pounded to even thickness
  • 2 large eggs
  • 2/3 cups panko bread crumbs
  • 1/2 cup Italian style bread crumbs
  • kosher salt
  • 3 cups Pomodoro sauce, or purchased marinara sauce (I like Rao's)
  • 1 1/2 cup whole milk mozzarella cheese, shredded on box grater
  • Basil & parsley fresh, chopped
  • 1/2 cup Parmesan cheese, grated
  • 1/4 teaspoon crushed red pepper (optional)

Instructions

  1. Preheat oven to 400°F. Spray a 9x13 baking dish with spray.
  2. Place chicken in a zip -lock (or between parchment) and pound the chicken with the flat side of a meat mallet. Start in the center and work your way to the edges, until the chicken is 1/3 inch thick and an even thickness. (you don't want a hump because it won't cook evenly)
  3. Combine breadcrumbs in a bowl.
  4. Beat the eggs in a second shallow dish.
  5. Dredge one piece of chicken into the egg mixture, turning to fully coat it on both sides.
  6. Shake off any excess egg, then dip the chicken firmly into the breadcrumb mixture, turning to coat on both sides and packing the crumbs into any crevices.
  7. Transfer the chicken back to the baking sheet and repeat with the remaining chicken pieces.
  8. Heat 1/3 cup of olive oil in a large skillet over medium-low heat, until the oil shimmers. Add 2 pieces of chicken and cook until the breading is golden-brown and crisp and the chicken is just cooked through, 3 to 5 minutes per side. (Don't move the chicken around, it keeps it from browning) If it splatters, turn the heat down a bit. Right when it's done cooking, remove to a wire rack lined with paper towels, and sprinkle generously with salt. Repeat the process with the remaining chicken.
  9. Place a thin layer of Pomodoro sauce in the bottom of a 9x13 dish. Add browned chicken. Top each piece of chicken with a couple of tablespoons of sauce, and the mozzarella.
  10. Bake the Chicken Parmesan for 15-20 minutes or until the cheese is bubbly. Serve with grated parmesan, crushed red pepper if using, and chopped basil.

Notes

  • you want a big enough pan so that your chicken isn't super crowded
  • the chicken will be bland if you don't generously salt it
  • this can be assembled early in the day and refrigerated. Let it come to room temp before putting in the oven for the final bake.
