Game Day Quesadillas at Home or Tailgate

 
 

Today I’m sharing a fantastic Game Day Recipe I created with KC Chiefs Lineman Mitchell Schwartz

Chilly fall weekends are all about football games, hanging with good friends and of course eating! (and maybe a cool beverage or two ☺) 

I love to tailgate (at home or at the stadium) before Chiefs football games, but I really don’t like the hassle of trying to plan delicious food that is easy, crowd-pleasing and portable!

I teamed up with Kansas City Chiefs Offensive Lineman Mitchell Schwartz and Midwest Dairy to make your football tailgating experience easy, hassle-free, nutritious and super delicious!

Check out this video where Mitch and I made Grilled Cheese and Grilled Chicken Quesadillas. What I love about this Game Day recipe is that the quesadillas can be assembled at home, wrapped in foil and then easily grilled when you arrive at your tailgate party.  Watch the video here!

Not tailgating and watching football with a TV remote in your hand? Cook the quesadillas at home a few minutes before you’re ready to eat! I love these quesadillas in a grill pan skillet like Mitch

and I did, but a skillet also works amazingly!

I have also included a FREE printable with 5 different versions of Quesadillas that will be sure to please everyone at your gathering. The combinations are endless, so just pick and choose your favs and I promise that your crowd will be coming back for seconds so plan accordingly!

Quesadilla Tailgate (or home watch party) Tips:

  • Pick out your favorite quesadilla combinations and purchase ingredients a few days beforehand.

  • Don’t forget your condiments: Salsa, guacamole, sour cream, and cilantro are all good ideas.

  • Prepare any of the ingredients that need to be cooked (Short on time? Buy pre-made rotisserie chicken, salsa, etc.)

  • Pre-assemble your quesadillas and wrap them individually or place them all on a sheet tray wrapped in plastic wrap.

  • Grill the quesadillas directly on the grill (over indirect heat) or in a grill pan.

  • Set out your plates and napkins, and be sure to have plenty of chips, salsa, and cold beverages on hand!
