Summer Melon and Prosciutto Salad

The melons this summer are out of this world! I tried a new Tuscan melon the other day and it just blew my mind…it was so incredibly sweet. (I need to remember to try one new fruit or veg every time I go to the market:) Anyway, I knew needed to create a melon salad recipe asap;)

You can use whatever kind of melon you’d like…even all watermelon….whatever floats your boat:). Just add a bit of torn prosciutto and the drizzle of this sweet citrus dressing (made with Cervasi olive oil of course) ....and you will be in a moment of summer heaven. ahhhh.
