Fresh Sweet corn…is there really anything better at a summer gathering??.…..I think not! Well, maybe a cold Sangria…but I digress.
I love this recipe for a lot of reasons.
First, you don’t even have to cook the corn. I know, I’m not even kidding. I tried it both ways and it’s even better straight off the cob…and that means it’s a no-cook recipe. yahoo.
The vinaigrette is super easy and can be used on lots of other dishes. It starts with yummy Cervasi olive oil and then adds just a few more ingredients. Easy-Peasy.
Second, you can make it your own. I give you lots of ideas on ingredients you could use…and you simply add what you like or have on hand.
And lastly, it’s best at room temperature. That means it travels well and perfect for outdoor gatherings.
