Nothing says summer like the smell of fresh basil. I love to take a big whiff of a bunch of basil….just breathe it in and end up smelling a bit of summer heaven.
I created this recipe because I love pesto pasta salad. Well, l love all things pasta..@cervasi of course, but the best thing in my opinion about this dish is that it travels well, can be eaten at room temperature or cold, and it has a bit more of a creamy texture to it than a traditional pesto pasta.
I also love this recipe because you can really make it your own. I give you the basic recipe, (which can be made in less the 20 minutes) but I also have lots of ideas for “add-ins”. Yay!! In the salad pictured above I added blanched asparagus, peas and a few toasted pine nuts….yummm. I think it’s my favorite….today, but you can also add roasted chicken, spinach, any veggie, olives or capers….you get the drift.
