Easy Olive Oil Cake

Olive oil in a cake….WHAT??? Hey, if you don’t know about this you are kinda missing out because it’s GOOD…and I mean really good!

Olive oil cake is a very popular cake in Italy because it showcases one of the country’s most distinguished products…. Olive Oil!  Ok, we all know the health benefits of olive oil…and that it reduces the chances of cardiovascular diseases, including high blood pressure, stroke, high cholesterol, triglyceride levels, and inflammation.  But let’s get talking about how delicious it is in a cake recipe.

Before I tried this type of cake, I assumed it would taste heavy or ‘olive oily’ but it did not. It was so light, flavorful, moist, rich and not-too-sweet.  A great rustic cake, with a soft crumb and an addictive golden crust.

Olive Oil Cake Cervasi

Even die-hard butter devotees admit that olive oil (good olive oil I mean…and by good olive read….Cervasi olive oil) makes exceptionally good cakes.  It adds more moisture and the cake only gets BETTER over time.  You know I’m all about recipes that are perfect to make-ahead for easy entertaining!  In fact, this cake seriously improves the longer it sits.

It’s also versatile. Serve it plain alongside a cup of coffee for breakfast or brunch, or add a dollop of whipped cream for a rustic yet elegant dessert cake.

Now for the added benefit…It’s EASY to make. Easy Peasy!! If you know me at all, you know I’m no baker.  Baking is hard and it’s easy to mess up if you don't pay attention (paying attention is not one of my strengths).  This cake doesn’t have egg whites to whip and fold, or butter to cream, or even an electric mixer!  Just two bowls – one for wet and one for dry ingredients. Combine them, transfer the batter into cake or muffin pans and pop them in the oven. That’s my kind of cake.

I created this recipe just for Cervasi, and I’m not gonna lie…it’s one of the best I have ever had! I’m not bragging…I’m just saying that a lot of love went into it and maybe that’s why it’s so good:)
