One of my favorite healthy hacks....zucchini noodles!
I have to tell you, I LOVE pasta! I could eat it everyday...but now I need to be more conscious of what I'm eating and this has saved me! I eat them all the time! If your leery of breaking up with pasta all together, I started out going 1/2 and 1/2. Half pasta and half zucchini. But now I actually like the zucchini better....who knew!!? There is a link to the spiralizer I use under the Things I Love tab, it's the best one I've found and trust me, I have tried a few;)
I can literally make this in 10 minutes. So when I'm on my way home from work and am tempted to get takeout because I'm STARVING....I know I can whip this up quickly and I'll feel like I had a big bowl of comfort food! But instead, I had tons of vitamins and antioxidants and a dinner under 200 calories! (well until you add in the wine...but we won't talk about that right now)
I just toss the tomatoes in a bit of olive oil and a clove of fresh chopped garlic. Saute them for a few minutes, add a splash of white wine (optional but why not:), salt and pepper and a dash of chili flake...soooo delish!
Tip: you can use any tomatoes you'd like. I even use canned in the winter, but some canned tomatoes are much better then others. but that's a story for another time...
I toss the tomatoes over 1 zucchini that I spiralized then microwaved for about 1 minute. This serves 1, me, moi! If i'm really hungry I double it!
Tip: I drain some of the moisture out of the zucchini with a paper towel to avoid a watery "pasta" .
Can it get any easier then that? I garnish with fresh grated Parmesan and torn basil. It makes me a happy, fit girl!
