Friends often say, If I cooked like you I'd weigh 800 pounds! After thinking about i was like...no you wouldn't...but I should explain why. I've decided to share a few of my secrets with you...and the good news is...it's really pretty simple!. I will be hosting a series of Healthy Start classes beginning in January where I will share how I prepare easy, DELICIOUS, low calorie dishes ahead of time for the work week...that allows me to eat almost whatever I'd like on the weekend! You know how I love good food...so you know these will be yummy, right?!
The first class will be dedicated to soups and stews! Soups are great this time of year because they are filling, warm and make great use of winter produce. I have collected the best of the best and am excited to share these three with you!
In this class I will teach you how to prep, prepare in advance, freeze and even make these into Dinner Party worthy courses. We will start with a Butternut Cumin Soup. OK, I confess, I'm addicted to this right now. I even served it as a first course for Thanksgiving Dinner this year! The family went nuts for it! Even those squash haters! How much do I love that?
Second, we will be preparing and dining on an Italian Beef Stew that's amazing and for the third I've decided to leave it up to the class...each participant can vote for a low calorie Italian Wedding Soup, Hearty Chicken Tortilla or an Oven Roasted Tomato! I will also be serving and sharing a signature Cocktail and other snacks along the way, I call them my Healthy Hacks:)
