It’s the time of year when the big pot at the back of the cabinet beckons us to pull it out and fill it with hearty soups and stews. The attraction of a good bowl of hot soup or stew on a cold day is obvious and, like cooking anything else, making a soup or stew is a great way to spend a winter afternoon. Not to mention, it makes your home smell so homey when simmering on the stove.  

Tonight, experienced culinary instructor, Lauren Lane, is going to share some informative tips and tricks of making tasty and satisfying soups and stews. We’ll run the gamut from broth-based soups to hearty beefy stews as Lauren creates some of her families favorite winter warmers like classic French Onion Soup (Yum!), a hearty Italian Beef Stew (to learn simple, robust and warm stew techniques) that’s destined to become one of your family’s favorite go-to cold weather meals, and an authentic Italian Wedding Soup (if you’ve never experienced this soup, you’re in for a real treat.) She will also teach you to prepare a Light & Creamy Butternut Cumin Soup for those days when you’re not in the mood for a heavy meal.

You’ll get a little cooking time with Lauren as you learn how to recreate these gems step by step and, along the way, garner basic cooking skills and culinary knowledge on how to make a stock as a soup base, how to prepare and use a roux to add dimension, the benefits of pureeing, all about broths and thickening agents and so much more!

When in Rome, do as the Romans do! This proverb is especially easy to follow when it comes to the traditional dishes served up for generations in this iconic Italian city. Rome's rustic, pastoral cuisine combines some of Italy's tastiest ingredients in ingenious ways.

This evening you’ll work alongside an experienced instructor, Lauren Lane, as she shares her tips for creating authentic (and elegant) dishes that are perfect for both entertaining as well as for quick weeknight meals.  With a glass of wine in hand, you’ll get your “Italian on” as Lauren starts tonight’s lesson with homemade Ricotta Bruschetta and two toppings – butternut sage and herbed ricotta, followed by a colorful seasonal Insalata.  Next, we’ll learn to make Pasta Carbonara, one of everyone’s favorite dishes.  Plus, we’ll learn an Italian classic, Chicken Spiedini, which can be prepped in advance for stress-free entertaining. Finally, we’ll end our incredible evening with homemade Limoncello. What a treat!

Not to worry, you’ll get some cooking time next to Lauren and also take home tonight’s incredible recipes to recreate at home. We guarantee a fun night!  Mangia!

In this class, you'll hone basic knife skills and practice the fundamental cuts—mince, dice, brunoise, bâtonnet, and julienne, and learn when to use them! We will also cover everything you need to know about choosing, storing, sharpening, holding, and using the most important tool in the kitchen.  

We will even cook with all your expertly chopped ingredients! We will make an Italian Minestrone Soup and a Beautiful Salad to enjoy after class:)  Aaaaaand you’ll have soup to take home! Yay!

On Friday, June 22nd, I will be hosting a Summer in Tuscany inspired dinner party in my home. Designed and presented like a spirited dinner party, my PopUp event is an exploration into cooking and community. Some of the best dining experiences are not always in traditional restaurants – they tend to be meals where the entire menu is often a never to be repeated surprise. At this dinner, guests are encouraged to mingle around, joining in conversations that are free-flowing, making new friends and laughing ALOT.  For each gathering, I serve one special menu that includes five Italian Courses and a Signature Cocktail.  We seat communally at my farm table, and each course is served at the same time with some commentary from yours truly. For the adventurous diner, a Lauren Lane PopUp dinner delivers a memorable meal and experience.

Date and Time: Friday, June, 22th  2018, 6:30 pm – 9:30 pm

There’s more to lasagna than you think!  Tonight, we’ll discover handmade and layered “old school style” lasagna with a hearty “Bolognese Ragu” or ‘meat sauce’ and lots of fresh cheese (forget about that bagged kind!).  Once you learn to make this belly-warming comfort food the right way, you’ll never look back.

We’ll explore authentic Italian cooking and learn) basic culinary skills like a Bechamel sauce (a classic Mother Sauce), ‘mise en place’, how to make a roux, the proper way to deglaze a pan, sautéing techniques, and more in this evening’s interactive cooking class under the tutelage of an Italian culinary expert, Lauren Lane.

First we’ll start with Laurens’ favorite pasta dough, which you’ll learn to make from scratch and then turn it into fresh lasagna noodles. Making your own pasta sheets for lasagna isn’t difficult (once you know the tricks and tips that you’ll learn and practice tonight), and it is so rewarding! Then, dive right into the “meat” of the class as Lauren teaches a traditional Bolognese Ragu and the ultimate Italian dessert, Affogato, a decadent espresso-based treat - the perfect accompaniment to any Italian meal!

Pop-up dinner, also called supper clubs, are temporary spaces for Chefs to experiment and entertain . These events often operate from a private home, outdoor locations or a unique space.  Pop-up dinners have been popular since the 2000s in Britain, Australia, Italy and France but they are becoming more and more popular on the east and west coast of the US.  I absolutely LOVE creating these events and look forward each unique experience.

This cooking class was requested by SR.  She has a group of gals that have known each other for years.  SR had taken on of my cooking classes in the past and thought it would be great fun to have her friends over for a "girls night out" cooking class.  I taught them how to perp and cook a 5 course Italian meal...and they got to eat each course along the way.  We started with a signature cocktail...a winter Sangria...and omg...we had a few laughs for sure.  They left with a full belly, a big smile and the knowledge and recipes to create this dinner party again:)

Friends often say, If I cooked like you I'd weigh 800 pounds!  After thinking about i was like...no you wouldn't...but I should explain why. I've decided to share a few of my secrets with you...and the good news is...it's really pretty simple!. I will be hosting a series of Healthy Start classes beginning in January where I will share how I prepare easy, DELICIOUS, low calorie dishes ahead of time for the work week...that allows me to eat almost whatever I'd like on the weekend!  You know how I love good food...so you know these will be yummy, right?!

The first class will be dedicated to soups and stews!  Soups are great this time of year because they are filling, warm and make great use of winter produce.  I have collected the best of the best and am excited to share these three with you!

Butternut

In this class I will teach you how to prep, prepare in advance, freeze and even make these into Dinner Party worthy courses.  We will start with a Butternut Cumin Soup.  OK, I confess, I'm addicted to this right now.  I even served it as a first course for Thanksgiving Dinner this year!  The family went nuts for it!  Even those squash haters!  How much do I love that?

Second, we will be preparing and dining on an Italian Beef Stew that's amazing and for the third I've decided to leave it up to the class...each participant can vote for a low calorie Italian Wedding Soup, Hearty Chicken Tortilla or an Oven Roasted Tomato!  I will also be serving and sharing a signature Cocktail and other snacks along the way, I call them my Healthy Hacks:)
