I love a Caprese salad, I really do, but when tomatoes aren’t quiiiiiite in season…it’s just not as good. Am i right? So I just solved this problem and came up with your very favorite year- around Caprese salad. Are you excited yet? You should be:)
The challenge is the tomato – they’re either really great OR lacking in flavor in mealy. Ugh – the spoiler to making anything with tomatoes that aren't in season. But, wait for it, what about those dainty little cuties that always taste like candy? Enter the answer, the cherry tomato, the grape tomato, and those beautiful little cherubs. That’s right peeps, those little fellas aren’t named after fruit for nothing. They are sweet and in season virtually ALL YEAR ROUND. They might be a little tiny for a sandwich (unless it's an adorable tiny sandwich), but they ARE perfection in a salad.
This salad rocks because it’s simple, fresh and you taste each ingredient. It’s not just a ton of ingredients thrown in a bowl…noooo, each one of these lovely ingredients brings something to the party, and there are no slackers! But do take note, when using just a few ingredients to make something amazing (like the Italians do)…you need to be sure each of them are top notch….so don’t skimp, you’ll be disappointed. #cervasi oil is to die for:)
The good news is that all the ingredients are super straightforward. Tomatoes, mozzarella, basil, lemon juice and olive oil (Cervasi olive oil of course) …hello, couldn’t be easier than that right?
Another great thing about this salad, is that the prep times is nil…(I mean not very long). All you do is cut your cherry tomatoes in half and mix the dressing: some good extra virgin olive oil and lemon juice, salt & fresh cracked pepper and done…wowza…we can all handle that. Yes…we can ALL handle that (wink). Then you simply combine the tomatoes, cheese, basil and dressing…and you’ve just made a FRESH, CLASSIC, entertaining worthy and oh so tasty salad!
Oh…one note on the basil…do you store yours in the fridge?? STOP IT…. It dies in there, like really fast it dies in there. It’s even cruel. Instead, just put your basil stems in a little jar of water…just as if they were pretty little flowers. Then simply place them on your counter (not in direct sun) and they will last a loooooong time. Whew…how many sweet basil sprigs did we just save? (Job well done, I can feel really good about myself today – I might have saved a life.)
Ok…one more note…do you store your uncut tomatoes in the fridge?? PAH_LEASE, stop is again…they lose their texture and flavor really fast…and NO ONE likes a mealy tomato…I mean no one.
Whelp, there you have it…a Caprese salad, but WAIT…that’s not all….if you order today…Just kidding. What I was going to say is that’s not all…I also will show you how to turn this little gem of a recipe into a killer pasta salad. Could life get any better? I think not.
