I am in love with all things butternut these days, which is weird since I hated it as a kid. I thought it was mushy, sweet and flavorless and I banned it from my existence. Until that is…I tasted a roasted butternut cumin soup...and it was so so good. It was rich, creamy and smoky and absolutely delish!
